Just occured to me, I need complete player rosters so I can geek out and do GFL Fantasy football! Anything not directly covered in The Starter can be filled in by fanfic... hmm, or an enterprising fan (I'm quite lazy) could do a play by play podcast.
Even the teams which were in the Rookie were not completely fleshed out. Check out the Wiki Entry on the Texas Earthlings. Definitely has some holes

Like UV mentioned, the wiki is probably the best place to get some of this info. Along with the Texas Earthlings roster, there's also the roster for the Ionath Krakens. However, this is probably the most complete team listing. Fingers crossed for more when The Starter is released!
